About Chef Mimmo

Chef Mimmo was born and raised in Northern Italy and had a passion for the culinary world from a young age. He began his culinary career at Fontana Rosa in Liguria, Italy. There, he learned the ins and outs of pizza making and gained culinary skills under some of the most well-known classically trained Italian chefs in Northern Italy. From there, he opened two restaurants in Italy specializing in fresh fish, pesto, gluten-free pasta and pizza, EVOO, and Italian desserts. After growing Il Vascello on the coastal beach for 14 years, he decided to fulfill a lifelong dream and bring his experience to New York City where he opened Mimmo Cucina Italiana. He created a diverse, yet simple menu with quality ingredients that appealed to the neighborhood regulars and those visiting the area. Rated “A” by the City of New York, Mimmo Cucina Italiana was a gem of the Upper East Side. After vacationing in Denver, he fell in love with Colorado and decided to make the move across the country, landing in Cherry Creek. Chef Mimmo specializes in Italian and New American cuisine with an emphasis on wood fired oven pizza, pasta, fish, meat, tiramisu, and torta della nonna. Mimmo brings a uniqueness to Denver by providing an expertise in authentic Northern Italian cuisine as well as having been trained in gluten free cooking. Certified by the Italian Celiac Association. Chef Mimmo is currently the Executive Chef for The Warwick Hotel/Gattara Restaurant in downtown Denver.
